- 2 lbs Hollywood Fries Potatoes, scrubbed
- 6 cloves of garlic
- 8 sprigs of fresh thyme, picked from the stems
- 5 Tbsp olive oil
- salt and pepper to taste
Preheat the oven to 450°F.
Place the whole potatoes into a microwave-safe dish. Do not poke the potatoes. Microwave on High for 3 – 4 minutes. Let cool.
Cut each potato lengthwise into 8 even wedges.
In a large mixing bowl, combine the potato wedges with the garlic, olive oil, thyme, and lightly sprinkle with salt and pepper.
Arrange the potatoes and garlic in a single layer on a baking sheet. Bake for 10 minutes until the potatoes are crisp, flip the wedges and cook an additional 10 minutes until they are golden brown on all sides. Transfer to a plate, season with salt and pepper to taste, and serve.
