Gourmet French Fries

  • 2 lbs Hollywood Fries Potatoes, scrubbed and peeled
  • 2 quarts peanut oil


The trick to Gourmet French Fries that are crispy on the outside and soft on the inside is double-frying them. Although an alternative is to microwave the cut, raw potatoes for 4 minutes on high and fry them once in 375°F oil and they come out just the same. It’s still double-cooking, just not double-frying.

In a large Dutch oven or deep fryer, heat the oil to 325°F.
Cut the potatoes into fries ⅜” thick. Be sure the fries are even in size to ensure even cooking.
Soak the cut fries in ice water for about 30 minutes. This removes a lot of the starch, making the fries less sticky when frying. Pat the fries dry with a paper towel before frying.
When the oil reaches 325°F, fry small batches of the fries for about 2 minutes; they will be softened but not browned. Remove from the oil and let them rest, or sweat, on paper towels for at least half an hour, up to 2 hours.
Increase the temperature of the oil to 375°F. Cook the fries a second time until they are golden brown, about 4 – 6 minutes. Drain again on the paper towels, transfer to a serving dish, and season with one of the gourmet seasonings below while they are still warm.

Lemon-Parsley Fries: Combine 1 heaping Tbsp each of lemon zest and chopped parsley in a small bowl. Sprinkle the mixture over warm french fries. Salt and pepper to taste.
Red Pepper Fries: Simmer 1 Tbsp crushed red pepper in ¼ cup olive oil for about 5 minutes. When the fries are done, remove the crushed red pepper from the oil (if you like hot leave the red pepper in) and drizzle the oil over the french fries. Salt to taste and toss.
Truffle Fries: Drizzle 1 Tbsp warmed white truffle oil over fries. Sprinkle with ¼ cup Parmesan cheese, salt and pepper to taste, and toss.
Garlic Fries Recipe: Lightly sauté ½ cup minced garlic in ¼ cup olive oil. Stir in 1 Tbsp thyme. Drizzle the garlic mixture over warm french fries and toss. Sprinkle ¼ cup grated Parmesan cheese over the fries and toss again. Salt and pepper to taste.

Note: Using Peanut Oil makes your Hollywood Fries healthier as well as taste better! Peanut oil is low in saturated fat and high in heart-healthy poly- and monounsaturated fats. Another healthy oil to fry with is Grapeseed Oil.
