A Hollywood Fries potato is a denser potato used specifically for frying. It will cook without absorbing much oil, making perfect non-greasy, healthier french fries. A Hollywood Fries potato also cooks slightly faster than a standard Russet potato. The following recipes allow for a faster cooking time. Cut fries into ¼” x ¼” strips of equal length, be sure the fries are even in size to ensure even cooking.

Combine the potatoes and the Canola oil in a large heavy-bottomed pot. (You can use Peanut oil for healthier fries) Cook over high heat until oil and potatoes has reached a rolling boil, about 3 minutes. Reduce to medium heat and continue to cook, without stirring, until potatoes are limp but beginning to firm, about 5 minutes. Meanwhile, line a baking sheet with a double layer of paper towels.

Using tongs, stir potatoes, gently scraping up any that stick, and continue to cook, stirring occasionally, until golden and crisp, 5 to 10 minutes longer. Using a skimmer or slotted spoon, transfer fries to paper towel-lined baking sheet. Season with salt and serve immediately.

Note: Using Peanut Oil makes your Hollywood Fries healthier as well as taste better! Peanut oil is low in saturated fat and high in heart-healthy poly- and monounsaturated fats. Another healthy oil to fry with is Grapeseed Oil.
