Potato Salad with Blue Cheese

Ingredients

  • 2 lbs Pacific Gold Red Potatoes, sliced ½ inch thick
  • ¾ cup blue cheese, crumbled
  • ½ cup mayonnaise
  • ½ cup celery, diced
  • ⅓ cup sour cream
  • ¼ cup white wine vinegar
  • ¼ cup fresh parsley, chopped

Preparation

  • Boil potatoes in a large pot of salted water until tender when pierced, about 10 minutes; drain.
  • Whisk remaining ingredients together in a large bowl.  Add hot potatoes and toss to coat.  Serve warm or at room temperature.
