Roasted Fingerling Potatoes with Sweet Onion

  • 5 – 6 Pacific Gold Fingerling Potatoes
  • 1 large Vidalia Sweet Onion
  • garlic salt
  • fresh ground pepper
  • 2 – 3 Tbsp extra-virgin olive oil
  • tarragon (optional)
  • dill (optional)
  • cilantro (optional)


  • Cut the 5-6 Pacific Gold Fingerling Potatoes into ½ inch to 1 inch sections. Form a sheet of aluminum foil into a bowl and place the cut potatoes into the bowl.  Chop up the sweet onion and mix it in with the potatoes.  Season with garlic salt, fresh ground pepper and cover generously with the olive oil. Optionally, season with tarragon, dill or cilantro.  Seal the aluminum foil and place on the BBQ on a medium to low flame.  Cook for 20-25 minutes until the potatoes have a chewy to crunchy texture.  Allow to cool for a few minutes and enjoy!
