Sweet Onion and Cranberry Chutney

Ingredients

  • 5 cups Mayan Sweet Onion, chopped
  • ⅔ cup red wine
  • ½ cup sugar
  • ½ cup dried cranberries
  • ⅓ cup red wine vinegar
  • 1 tsp fresh thyme, chopped
  • ¼ tsp salt
  • ½ tsp pepper

Preparation

  • This chutney is similar to cranberry jelly. It makes a fine accompaniment for a roasted turkey.
  • Combine sweet onion, red wine, sugar, dried cranberries, red wine vinegar, salt and pepper in a medium saucepan; bring to a boil. Reduce heat, and simmer 1 hour and 15 minutes, or until thick, stirring occasionally. Remove from heat; stir in 1 tsp thyme. Cool.
